
This is what I like to call my “cucumber for daze” recipe. Don’t get me wrong, cooking is my thing but sometimes I don’t feel like making a million components for a dish. I love making a huge amount of this salad and storing it in the fridge for whenever I am short a side dish. This is also a great stoner snack and a WAY healthier substitute for any munchie snacks you have lying around your flat (yeah…you, psycho fatty). The cucumber is crunchy, the corn is yummy, and your mouth (and tummy) will be totes happy.
What you’ll need:
You’re wondering how I got my cucumbers all perfect right? Kudos me. Peel the cucumber and slice in half. Use a small spoon to scoop out the seeds (juicy part) and cut into half inch pieces. Throw the cucumber in a mixing bowl and add 2 tablespoons of apple cider vinegar (you can use white vinegar if your not keen on the apple). Add a bit of salt and pepper and put aside. Cut onions and tomatoes and add to the cucumber. Add canned corn and feta cheese. Drizzle with a small amount of olive oil.
Cucumbers are super low cal and tomatoes have tons of vitamin c which makes this salad perfect for your summer bod.
